One of my favorite things about this time of year, is PUMPKIN! I love pumpkin!! I also love trying and experimenting with new recipes. I came across this one and even though I love all of the ingredients in this recipe, wasn’t sure how they were going to turn out or taste. But I have to say, they are so GOOD, fast, easy and healthy. Give them a try!
Makes 12 Muffins
3/4 cup all natural pumpkin puree
1 cup all-natural almond butter or natural peanut butter
1/3 cup raw honey, or pure maple syrup
1 large whole egg
1 tsp cinnamon
1 tsp baking soda
pinch of sea salt
1/3 cup Cacao Chips, I used Enjoy Life mini chips
(Chocolate is optional)
Preheat oven to 350 F. Grease or spray your muffin tin with coconut oil, or use liners.
Combine all ingredients well, just until smooth.
Bake for about 15-18 minutes. Keep an eye on them!
