Baked Oatmeal

Baked Oatmeal
2 cups rolled oats
1 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. fine sea salt
 1/3 cup pure maple syrup
2 cups milk
1 or 2 eggs (I use 2 small)
2 Tbsp. coconut oil or butter, melted
2 tsp. pure vanilla extract
1 1/2 cup berries (raspberries, blackberries, etc)
Preheat the oven to 375 degrees.  Mix together the oats, baking powder, cinnamon and salt.  In another bowl, mix together the maple syrup, milk, egg, coconut oil and vanilla extract.  Arrange half of the berries on the bottom of a baking dish (I use a 9″ pie plate).  Cover the fruit with the oat mixture and then drizzle the milk mixture over the oats and fruit.  Arrange the remaining half of the berries across the top.  Bake for 35-40 minutes, until golden and set.
